April 2007
A member of the cabbage (Cruciferae) family, different varieties of mustard grow wild around the world. While its greens are tasty, it is mustard's tiny seed that have been commonly immortalized throughout history. Both Jesus and Buddha referred to the mustard seed in their teachings. Pythagoras, the Greek mathematician and philosopher, wrote of mustard's healing qualities around 500 BC. In traditional Ayurvedic / Eastern medicine, the mustard seed is valued as a purifier and a stimulant for energy, circulation, and heat. Modern research has identified a class of compounds in mustard seed, as well as in horseradish and wasabi, called isothiocyanates. Studies have found them to have a powerful protective effect in stimulating the immune system.
Beyond the Ballpark Variety
Ancient Egyptians may have been the first to grind mustard seed with vinegar and salt to make the condiment that is so popular today. From Dijon, France to California's Napa Valley, connoisseurs gather to celebrate their favorite gourmet mustard preparations. The bright yellow kind that Americans often slather on hot dogs and sandwiches doesn't really deserve to be called mustard. Many yellow mustards contain little mustard seed and are made with distilled vinegar (a petrochemical derivative). If this is the kind of mustard you are accustomed to, you will be delighted and amazed when you taste the real thing … EDEN. It's the flavor you expect, but better.
