Eden Organic Yellow Mustard is made from whole yellow mustard seed, known for its mild heat and mellow sweetness. The seeds are hammer milled into a stainless steel tank with pure water, organic apple cider vinegar, sea salt, organic turmeric, organic paprika, and organic garlic. It is blended and then smoothly ground on a stone mill. It is allowed to sit and meld for at least 48 hours before packing into glass jars. Mustard is a member of the cabbage family. Its plant grows three to four feet high and produces bright yellow flowers that contain small round seeds. Yellow mustard seed (Brassica alba) and brown mustard seed (Brassica juncea) are each about three millimeters in diameter and round, but brown mustard is very hot and spicy due to chemicals contained in the bran's dark pigment, while yellow mustard's flavor is pleasant and just mildly spicy. Yellow mustard is also known as sweet mustard or American mustard.
