Set aside 2 tablespoons of pistachios for garnish. Place the remaining pistachios in a blender and grind several seconds. Add the banana, Edensoy, ice, maple syrup and matcha. Pulse several seconds. Pour into glasses and sprinkle 1 tablespoon of pistachios on top of each glass for garnish.
