Tomato Bean Gazpacho

Tomato Bean Gazpacho


  • 29 ounces organic diced tomatoes, do not drain
  • 2 tsp minced jalapeno
  • 15 ounces Eden Garbanzo Beans, do not drain
  • 1/2 tsp Eden Sea Salt, or to taste
  • 1 medium cucumber, peeled, julienned
  • 1/2 cup coarsely grated carrot
  • 2 cloves garlic, minced
  • 2 Tbsp finely chopped green onions
  • 1 1/2 Tbsp Eden Shoyu Soy Sauce
    or 1 tsp. Eden Sea Salt, or to taste
  • whole wheat croutons, for garnish


Combine the cucumber, carrot, green onion, garlic and shoyu. Let marinate for 30 to 40 minutes, mixing occasionally. Place the tomatoes, jalapeno and sea salt in a blender or food processor. Puree until smooth. Pour into a mixing bowl and add the garbanzo beans. Mix and chill for 45 minutes. Ladle the chilled soup into individual bowls. Garnish each bowl with an equal amount of marinated vegetables and your favorite croutons.
