Ingredients
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 tsp Eden Toasted Sesame Oil
- 1 cup onions, diced
- 1/3 cup carrots, sliced into rounds
- 1/4 cup Eden Sliced Shiitake Mushrooms, soaked 5 minutes in hot water to cover, chopped, reserve liquid
- 15 ounces Eden Butter Beans
- 1 cup yellow summer squash, chopped
- 1 cup organic sweet corn, fresh or frozen
- 2 tsp Eden Wakame Flakes
- 5 cups water
- 1 cup green beans, chopped
- 1/4 cup Eden Shiro Miso
- 1/4 cup scallions, chopped for garnish
Directions
Heat oil in a medium soup pot and sauté the onions for 1 to 2 minutes. Add all remaining ingredients except for the green beans, miso and scallions. Cover and bring to a boil. Reduce the flame to medium-low and simmer for 10 minutes. Add green beans and cook another 2 minutes. Reduce the flame to low, add the pureed miso, and simmer uncovered for another 1 to 2 minutes. Serve garnished with scallions.
