Spelt Spaghetti Primavera

Spelt Spaghetti Primavera

Ingredients

  • 14 ounces Eden Spelt Spaghetti
    or any Eden Spaghetti
  • 3 Tbsp Eden Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 2 cups small broccoli florets
  • 1 cup small cauliflower florets
  • 1 cup zucchini, sliced
  • 1 cup carrots, sliced thin
  • 1/2 cup water packed artichoke hearts, quartered
  • 1/2 tsp Eden Sea Salt, or to taste
  • 2/3 cup water or vegetable stock
  • 1/4 tsp Eden Black Pepper, or to taste
  • 2 Tbsp fresh basil, finely chopped

Directions

Cook pasta as package directs, drain and set aside. Heat oil in a large skillet, sauté garlic for 1 minute. Add broccoli, cauliflower, zucchini , carrot, artichokes and sea salt. Sauté for 2 to 3 minutes. Add water, cover and steam 2 minutes. Turn off flame, add pepper, pasta and basil. Toss thoroughly and serve.
