Ingredients
- 14 ounces Eden Spelt Spaghetti
or any Eden Spaghetti - 3 Tbsp Eden Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 2 cups small broccoli florets
- 1 cup small cauliflower florets
- 1 cup zucchini, sliced
- 1 cup carrots, sliced thin
- 1/2 cup water packed artichoke hearts, quartered
- 1/2 tsp Eden Sea Salt, or to taste
- 2/3 cup water or vegetable stock
- 1/4 tsp Eden Black Pepper, or to taste
- 2 Tbsp fresh basil, finely chopped
Directions
Cook pasta as package directs, drain and set aside. Heat oil in a large skillet, sauté garlic for 1 minute. Add broccoli, cauliflower, zucchini , carrot, artichokes and sea salt. Sauté for 2 to 3 minutes. Add water, cover and steam 2 minutes. Turn off flame, add pepper, pasta and basil. Toss thoroughly and serve.
