Ingredients
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 1/2 cup onion, sliced in half lengthwise, and then thinly sliced
- 2 cloves garlic, minced
- 29 ounces Eden Garbanzo Beans, drained
- 28 ounces organic stewed tomatoes, do not drain
- 1/4 tsp Eden Sea Salt, or to taste
- 1/8 tsp Eden Black Pepper, or to taste
- 2 Tbsp fresh mint leaves, finely chopped
Directions
Heat oil in a medium sauce pan. Sauté the onion and garlic for 5 to 7 minutes, stirring frequently, until the onions start to brown. Add all remaining ingredients except for the mint. Cover and simmer 8 to 10 minutes, stirring occasionally. Remove cover. Remove from the burner and mix in the mint. Serve.
