Ingredients
- 8.8 ounces Eden Soba - 40% Buckwheat, 1 package
or any Eden Soba - 8 ounces organic soft tofu, cubed
- 1/2 cup carrots, julienned, blanched 1 minute
- 1 cup green beans, stems removed, chopped in 1 inch pieces and blanched 3 minutes
- 2 tsp Eden Toasted Sesame Oil
- 2 Tbsp Eden Shoyu Soy Sauce
- 1 Tbsp lemon juice, freshly squeezed
- 1 Tbsp orange juice, freshly squeezed
- 1 Tbsp lime juice, freshly squeezed
- 2 Tbsp Eden Mirin
- 1/4 cup scallions, finely chopped
- 1/2 tsp fresh ginger root, finely grated
Directions
Cook soba as package directs, rinse under cold water in a strainer and drain. Mix the dressing ingredients together in a measuring cup. Place the tofu cubes in a small mixing bowl and pour the dressing over. Toss gently to coat the tofu with the dressing. Place the soba and blanched vegetables in a serving bowl. Pour the tofu and dressing over the soba, and gently toss to coat the soba with dressing. Serve.
