Soba Noodle Salad

Soba Noodle Salad


  • 8.8 ounces Eden Soba - 40% Buckwheat, 1 package
    or any Eden Soba
  • 8 ounces organic soft tofu, cubed
  • 1/2 cup carrots, julienned, blanched 1 minute
  • 1 cup green beans, stems removed, chopped in 1 inch pieces and blanched 3 minutes


Cook soba as package directs, rinse under cold water in a strainer and drain. Mix the dressing ingredients together in a measuring cup. Place the tofu cubes in a small mixing bowl and pour the dressing over. Toss gently to coat the tofu with the dressing. Place the soba and blanched vegetables in a serving bowl. Pour the tofu and dressing over the soba, and gently toss to coat the soba with dressing. Serve.
