Pasta White Bean Salad

Pasta White Bean Salad


  • 12 ounces Eden Vegetable Spirals, 1 package
    or Eden Kamut Vegetable Spirals or any Eden Spiral Pasta
  • 1/2 pound pea pods, blanched 1 minutes and chopped
  • 1 cup green onions, chopped
  • 1 medium red bell pepper, seeded and sliced into strips
  • 30 ounces Eden Navy Beans, 2 cans, drained
    or Eden Great Northern Beans
  • 4 cloves garlic, pressed
  • 3 Tbsp Eden Toasted Sesame Oil
  • 2 Tbsp Eden Ume Plum Vinegar, or to taste


Cook pasta as package directs, al dente, drain, and cool. While pasta is cooking, blanch the pea pods in 3 cups boiling water for 1 minute. Remove, rinse quickly under cold water, and drain. Mix pasta, beans, vegetables, and garlic. Add toasted sesame oil and ume plum vinegar to the salad, mix and serve.
