Black Soy & Black Bean Quesadilla Appetizer

Ingredients

  • 1 Tbsp Eden Extra Virgin Olive Oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup green bell pepper, diced
  • 15 ounces Eden Refried Black Soy & Black Beans
  • 4 ounces chopped mild chili peppers, do not drain
  • 1/4 cup scallions, chopped
  • 1 tsp ground cumin
  • 6 organic whole wheat tortillas
  • 1 cup organic salsa, see Eden's recipe, or store bought

Directions

Preheat the oven to 375°. Heat the oil in a skillet and sauté the onion, garlic and peppers for 2 to 3 minutes. Add the refried beans, chili peppers, scallions and cumin. Mix until smooth. Spread an equal amount of the bean mixture evenly over three of the tortillas. Cover with the remaining three tortillas. Place the filled tortillas on a lightly oil baking sheet and bake about 10 minutes or until golden and the bean mixture is hot. Remove, and slice each quesadilla into four equal size wedges and serve with salsa on top.
