Ingredients
- 8 cups spinach, washed
- 2 cups water, for cooking spinach
- 2 Tbsp Eden Bonito Flakes, crumbled, optional
- 3 Tbsp Eden Mirin
- 1 1/2 Tbsp Eden Shoyu Soy Sauce
- 2 tsp Eden Shake
- 1/2 cup water
Directions
Place the water,and shoyu in a saucepan. Heat slightly, turn off the flame and add the mirin. Refrigerate to chill. Bring 2 cups water to a boil, add the spinach and cook 1 minute until bright green. Place in a colander, rinse with cold water to set the color and drain. Squeeze out water from spinach using your hands. Place the spinach in a dish, mix the dressing ingredients together and pour over the spinach. Mix and let marinate for 30 minutes. Remove spinach, and squeeze out excess liquid. Chop spinach, garnish with bonito flakes, if desired and Eden Shake. This sauce can be used over any steamed or blanched greens or used as a dip sauce for any Eden Traditional Noodles or Pasta.
