Ingredients
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1 cup onion, coarsely chopped
- 30 ounces Eden Lentils w/Onion & Bay Leaf, do not drain
- 14 ounces organic diced tomatoes, do not drain
- 1/4 cup shredded unsweetened coconut
- 2 1/2 tsp mild curry powder, or to taste
- 1/2 tsp Eden Sea Salt, or to taste
Directions
Heat the oil in a medium saucepan and sauté the onions for 2 to 3 minutes, stirring frequently. Add all remaining ingredients. Stir to mix and bring to a boil. Reduce the heat to medium-low and simmer uncovered for 10 minutes, stirring occasionally.
