Place apple juice, shoyu and mirin in a saucepan. Heat over a low flame. Add diluted kuzu, stirring constantly until thick and translucent. Turn off flame and add the garlic, lemon and ginger juice. Adjust seasoning, if needed.
This sauce can be used to bake, broil or grill tofu, tempeh, grain burgers, seitan, fish, shellfish or vegetables. Simply baste and cook. Great for shish kebabs.
