Ingredients
- 1 piece Eden Kombu, 4 inches long
- 1/4 cup Eden Bonito Flakes
- 4 cups water
- 1/4 cup Eden Sliced Shiitake Mushrooms
Directions
Place the kombu and water in a medium pan, cover and bring to a boil. Remove kombu and add shiitake. Simmer 10 min. Turn off heat. Remove shiitake and add bonito, let sit 5 min. Strain out bonito and discard. The dashi is now ready to season with Eden Shoyu Soy Sauce, Eden Mirin (about 50/50), or Eden Miso. Serve over Eden Udon or Eden Soba or Eden Pasta
