Ingredients
- 3 cup organic canned pumpkin
- 3 cup Original Edensoy, or Unsweetened
- 1 cup water
or vegetable broth - 2 Tbsp organic maple syrup
- 1/2 cup onion, very finely minced or grated
- 1 Tbsp Eden Extra Virgin Olive Oil
- 1/2 tsp Eden Cinnamon
- 1/4 tsp ground nutmeg, or freshly grated nutmeg
- 2 tsp fresh parsley, minced for garnish
- 3/4 tsp Eden Sea Salt
Directions
Heat oil in a soup pot and sauté onion for 2 minutes. Combine Edensoy and water. Place all ingredients in a soup pot, mix well, cover and simmer over a low flame for 10 minutes. Do not boil. Serve hot or chilled and garnish with parsley.
