Heat oil in a medium sauce pan and sauté the onions for 1 to 2 minutes. Add Shiitake, carrot and bell pepper. Sauté 3 minutes. Add all remaining ingredients except the shoyu. Cover and simmer 15 minutes. Add shoyu and simmer 5 minutes.
