Heat oil in a heavy deep frying pot. Do not let it smoke. Deep fry a handful of noodles several seconds until they puff up, become crispy and slightly golden. Remove and drain. Continue deep frying until all noodles have been fried. Great served with a chow mein sauce or with stir fried vegetables.
