Ingredients
- 1 cup Eden Kamut Ditalini
or Eden Kamut Elbows, or any Eden Shell Pasta - 1 Tbsp Eden Extra Virgin Olive Oil
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1/2 cup celery, diced
- 1 1/2 cups carrots, diced
- 4 cups water
- 1 medium organic potato, diced
- 14 ounces Eden Crushed Tomatoes
- 1 cup Eden Kidney Beans, do not drain
- 2/3 cup Eden Pizza Pasta Sauce
- 1 Tbsp organic tomato paste
- 2 Tbsp Eden Shoyu Soy Sauce
- 1 cup Eden Cannellini (White Kidney) Beans, do not drain
- 1 cup green beans, sliced in 1" lengths
- 1/3 cup frozen or fresh green peas
Directions
Cook pasta as package directs, rinse, drain and set aside. Heat oil in a soup pot, sauté onions and garlic. Add celery, carrots, potatoes and water. Cover and bring to a boil. Reduce heat and simmer until vegetables are tender. Add pasta, shoyu, tomatoes, beans, pizza pasta sauce, tomato paste, green beans and peas. Reduce heat to medium-low and simmer 10 minutes. Serve.
