Black Bean Salsa with Tomatoes & Jalapeño

Ingredients

  • 15 ounces Eden Black Beans, 1 can drained
    or cooked Eden Dry Black Beans
  • 15 ounces diced tomatoes w/chili peppers, 1 can drained
  • 1/2 cup red onion, minced
  • 2 Tbsp lime juice, freshly squeezed
  • 2 tsp Eden Shoyu Soy Sauce
  • 1 tsp fresh cilantro, minced
    or 1/4 teaspoon dried cilantro
  • 2 Tbsp fresh parsley, minced
  • 1/2 cup tomatoes, diced
  • 1 tsp cumin
  • 1 tsp Eden Apple Cider Vinegar
  • 2 tsp fresh lemon juice
  • 1 Tbsp jalapeño, minced
  • 1/8 tsp Eden Coriander

Directions

Combine all ingredients. Mix and add extra shoyu, if desired. Serve with organic corn chips.
