Oriental Black Soybean Salad with Sesame Orange Dressing

Ingredients

  • Salad
  • 4 cups romaine lettuce, shredded
  • 2 cups cabbage, shredded
  • 1/2 cup scallions, thinly sliced
  • 1/2 cup red bell pepper, chopped
  • 1 cup organic sweet corn, fresh or frozen, blanched 1 to 2 minutes
  • 1 1/2 cups organic tomatoes, diced
  • 1 1/2 cups leftover cooked organic basmati rice
    or organic long grain rice
  • 15 ounces Eden Black Soybeans, 1 can, drained
  • Sesame Orange Vinaigrette
  • 1 tsp freshly grated ginger root
  • 1/2 cup organic orange juice
  • 1/4 cup Eden Brown Rice Vinegar
  • 2 Tbsp Eden Barley Malt Syrup
    or organic maple syrup
  • 2 Tbsp Eden Sesame Oil
  • 2 Tbsp Eden Toasted Sesame Oil
  • 1 Tbsp Eden Shoyu Soy Sauce
  • 1/8 tsp black pepper, freshly ground
  • Garnish
  • fresh parsley, chopped
    or cilantro
  • Eden Shake

Directions

Prepare the sesame orange vinaigrette by blending all dressing ingredients in a blender or food processor.

Toss all ingredients in a large mixing bowl. Just before serving, add enough dressing to thoroughly coat the ingredients. Garnish with parsley or cilantro and Eden Shake.
