- 4 cups heirloom purple potatoes, cut into 1/2" pieces
- 15 ounces Eden Garbanzo Beans, rinsed and drained
Boil or steam the potatoes until tender, about 12 to 15 minutes. When the potatoes are done, place in a mixing bowl with the garbanzo beans. To prepare the dressing, whisk together the oil, vinegar, mustard, basil, oregano, garlic, salt and pepper in a small bowl. Adjust the salt and pepper to taste. Pour the dressing over the potatoes and garbanzo beans. Gently toss to mix.
