Ingredients
- 4 cup baby salad greens
- 4 cups romaine lettuce, chopped
- 1/2 cup cucumber slices
- 1/2 cup tomato, cut in wedges or chopped
- 1 Tbsp Eden Genmai Miso
- 1 Tbsp Eden Shiro Miso
- 2 tsp Eden Brown Rice Vinegar
- 1 tsp Eden Brown Mustard
- 1/4 cup orange juice
- 1/4 cup water
- 3 Tbsp Eden Roasted Sesame Tahini
- 1 Tbsp minced parsley
- 2 tsp finely grated ginger root
- 1/2 tsp organic maple syrup
Directions
Using your hands, squeeze the grated ginger to extract 1 teaspoon of ginger juice into a blender. Discard pulp. Place all remaining ingredients in the blender and pulse several seconds to mix. Place in a serving bowl.
Toss the salad greens, lettuce, cucumber and tomato in a salad bowl. Serve with dressing on the side.
