Heat oil in a skillet and saute the leeks for 5 minutes. Combine the misos and puree with 2 Tbsp cold water.
Combine the miso, tahini and water. Pour over the leeks and mix. Cover and simmer on medium-low about 4 to 5 or minutes until the leeks are tender. If more water is needed during cooking to prevent scorching, add 1 or 2 tsp at a time.
Remove the lid and cook off any remaining liquid.
Spread on whole grain bread and crackers, or use as a dip for organic chips or raw vegetables.
