Ingredients
- 8 ounces any Eden Udon
- 1 cup pitted Kalamata black olives, coarsely chopped
- 1/4 cup Eden Extra Virgin Olive Oil
- 1/2 tsp Eden Hot Pepper Sesame Oil
- 2 Tbsp finely chopped red bell pepper
- 1/2 cup finely chopped fresh parsley
- 1/2 cup finely chopped fresh mint
- 1 Tbsp finely chopped fresh thyme
- 1 clove garlic, minced
- 2 Tbsp small capers, drained
Directions
Cook pasta as package directs. While the pasta is cooking, combine all remaining ingredients in a medium-size mixing bowl. Drain and rinse the pasta when al dente. Place the pasta in the mixing bowl and toss with olive and herb mixture. Serve.
