Serves 5 | Prep Time 10 minutes | Cook Time 25 minutes
• 2 cans Eden Great Northern & Barley Chili
or any Eden Chili
• 1 cup organic sweet corn, fresh or frozen
• 1 cup assorted bell peppers, diced
Cornbread
• 1 cup organic yellow cornmeal, coarsely ground
• 3/4 cup Eden Soft White Pastry Wheat Flour
• 2 tsp non-aluminum baking powder
• 1/4 sp Eden Sea Salt
• 1 cup Unsweetened Edensoy
• 1 Tbsp Eden Apple Cider Vinegar
• 2 Tbsp Eden Safflower Oil
Preheat oven to 375°. Combine chili, corn, and peppers. Place in a lightly oiled 10" pie pan. Combine dry ingredients for cornbread and mix. Combine wet ingredients for it let sit for 2 to 3 minutes. Blend wet and dry ingredients . Pour it evenly over chili and corn. Bake 25 minutes or until cornbread comes out dry and golden brown.
