Spaghetti with Hot Pepper Peanut Sauce

Serves 5 | Prep Time 12 minutes | Cook Time 12 minutes

Ingredients

• 14 oz Eden Kamut Spaghetti, or Spelt Spaghetti

• 1 medium red bell pepper, seeded, sliced thin

• 1 medium onion, cut in half, sliced

• 1 bunch broccoli, cut into florets, peel stems and slice thin

Spicy Peanut Sauce

• 2 cloves garlic, finely minced

• 1/4 cup organic creamy peanut butter

• 3 Tbsp Eden Mirin, or organic maple syrup

• 2 1/2 Tbsp Eden Brown Rice Vinegar

• 2 1/2 Tbsp Eden Shoyu Soy Sauce

• 1 Tbsp Eden Toasted Sesame Oil

• 1/2 tsp Eden Hot Pepper Sesame Oil

• 1 pinch red pepper flakes, optional, if a spicier flavor is desired

Directions

Cook pasta per box directions for 9 minutes. Add the onions, pepper strips, and broccoli and cook 2 to 3 minutes. Do not over cook. While the pasta is cooking, place all ingredients for the peanut sauce in a medium mixing bowl and whisk until smooth. When the pasta and vegetables are done, drain, and place the hot pasta in the mixing bowl. Gently toss until the pasta and vegetables are evenly coated with sauce. Serve.
