Cranberry Walnut Scones

Cranberry Walnut Scones

1 cup organic unbleached white flour

1 cup organic whole wheat flour
or organic kamut flour

1/2 cup organic rolled oats

1 1/2 tsp non-aluminum baking powder

1 tsp baking soda

1/2 tsp Eden Sea Salt

3/4 tsp ground cinnamon

1 pinch ground ginger

1 pinch ground nutmeg

4 ounces Eden Dried Cranberries

1/2 cup walnuts, coarsely chopped
or pecans

1 cup Edensoy Original
Edensoy Extra Original, or Edensoy Unsweetened

1 Tbsp Eden Apple Cider Vinegar

1/4 cup organic maple syrup

2 Tbsp Eden Safflower Oil
or Eden Extra Virgin Olive Oil

3 Tbsp any Eden Apple Sauce


Preheat the oven to 400°. Line a baking sheet with parchment. In a large bowl, mix the first eleven ingredients. In a measuring cup, mix the Edensoy, vinegar, maple syrup, oil and apple sauce and let sit for 5 minutes. Stir the wet ingredients into the dry, just until moistened, forming a dough. Turn the dough out onto a floured board. Dust hands with flour and roll or pat dough into a flat disk about 1/2 inch thick. Cut into 8 or more triangular wedges and transfer to the baking sheet and brush the tops with olive oil. Bake until golden, about 20 minutes. Serve warm with Eden Apple Butter, Apple Cherry Butter, Cherry Butter and any Eden Tea.
