Pasta with Red Wine Vinaigrette

Serves 6 | Prep Time 10 minutes | Cook Time 10 minutes

Ingredients

• 12 ounces Eden Kamut & Quinoa Twisted PairĀ®, 1 package
or Eden Spelt & Buckwheat Gemelli

• 2 cups broccoli, small florets, blanched 2 minutes

• 2 cups cauliflower, small florets, blanched 2 minutes

• 2 cups carrots, sliced and blanched 2 minutes

Vinaigrette

• 1/4 cup Eden Red Wine Vinegar

• 1/4 cup water

• 3 Tbsp Eden Extra Virgin Olive Oil

• 2 cloves garlic, minced

• 2 tsp Eden Brown or Yellow Mustard

• 1/4 tea Eden Sea Salt

• 1/4 tea Eden Black Pepper

• 2 Tbsp fresh basil, finely chopped

• 1/2 tsp Eden Dried Oregano

Directions

Cook pasta as package directs, rinse quickly and drain. In a food processor, blend the vinegar, water, oil, salt, pepper, mustard, basil and oregano. Place pasta, broccoli, cauliflower and carrots in a bowl. Toss with the dressing and serve room temperature or chilled.
