• 3 Tbsp Eden Hiziki
or Eden Arame
• 1 cup water
• 2 medium carrots, julienned
• 1 cup cauliflower florets, blanched 3 minutes, rinse
• 1 cup broccoli florets, blanched 2 minutes and rinse
• 1/2 cup snow peas, remove strings, slice in half, blanch 1 min., rinse
• 7 oz Eden Brown Rice Udon, or
any Eden Udon
• 1/2 cup green onions, thinly sliced
Dressing
• 1/2 tsp Eden Hot Pepper Sesame Oil
• 1 tsp Eden Toasted Sesame Oil
• 1 1/2 Tbsp Eden Ume Plum Vinegar, or to taste
• 1/4 cup EDEN Roasted Sesame Tahini
• 2 cloves garlic, minced
• 1/4 cup water
• 2 Tbsp parsley, minced
Rinse and soak hiziki or arame in warm water to cover for 15 minutes. Discard soaking water. Place hiziki or arame in a small saucepan and simmer 10 to 15 minutes in 1 cup water. Drain, rinse, and place in a mixing bowl. Add blanched vegetables. Cook pasta as package directs, rinse, and drain. Mix pasta, hiziki or arame, blanched vegetables, and green onions. Prepare the dressing by mixing ingredients in a blender. Add to the salad and mix well. Chill 1 hour before serving.
