Serves 5 | Prep Time 10 minutes | Cook Time 15 minutes
• 2 Tbsp Eden Extra Virgin Olive Oil
• 5 medium plantains, or small bananas
• 30 ounces Eden Caribbean Black Beans, 2 cans, do not drain
• 1/2 cup organic salsa, see Eden's recipe, or store bought
• 1 tsp Eden Shoyu Soy Sauce
Heat the beans in a medium saucepan over a low flame until the plantains have been pan-fried.
Peel and slice the plantains in half lengthwise. Sprinkle two or three drops of shoyu on the cut side of each of the plantain halves. Heat the oil in a large skillet. Fry the plantain halves on each side until golden brown. Add more oil as needed. Remove and drain on brown paper towels.
Place a serving of beans on each individual plate along with two slices of fried plantain and a serving of salsa.
