• 15 ounces Eden Caribbean Black Beans, drained
• 1/2 cup organic salsa, see Eden's recipe, or store bought
• 4 organic whole wheat tortillas
• 1 avocado, peeled, seeded and sliced
Preheat oven to 350°F. Slice the tortillas into wedges. Heat tortilla wedges until slightly crisp. Place the beans in a blender or food processor and puree until smooth. Place in a serving dish. Dip the crisp wedges of tortilla into the bean dip and top with a little salsa and a slice of avocado.
Note: Organic corn chips can be substituted for the tortilla wedges, if desired.
