Roasted Red Pepper, Olive & Garlic Bread

Serves 8 | Prep Time 10 minutes | Cook Time 5 minutes


1 loaf French or Italian bread, sliced in half lengthwise

1/2 cup roasted red peppers, chopped

1/2 cup pitted black olives, sliced

1/2 cup red onions, sliced into very thin rings

1 tsp dried basil

2 to 3 Tbsp Eden Extra Virgin Olive Oil

3 cloves garlic, finely minced


Preheat the oven to 350°. Place equal amounts of peppers, olives, onions, basil and garlic on top of each length of bread. Drizzle the olive oil equally over the vegetables. Place bread on a baking sheet and bake for 5 minutes or until crisp and golden. Be careful not to burn the bread. Slice and serve.
