Serves 4 | Prep Time 5 minutes | Cook Time 20 minutes
• 2 cups leftover, cooked Eden Short Grain Brown Rice
• 1 1/2 cups Vanilla Edensoy, or Extra Vanilla
• 2 Tbsp Eden Dried Wild Blueberries
• 2 Tbsp Eden Dried Cranberries
• 2 Tbsp Eden Roasted Tahini
• 2 Tbsp Eden Barley Malt Syrup, or organic maple syrup
• 1 tsp pure vanilla extract
• 1/4 tsp Eden Cinnamon
• 1/2 tsp lemon peel, freshly grated
Place the cooked rice, soymilk, dried fruit, tahini and syrup in a saucepan. Cover and bring almost to a boil. Reduce the heat to medium-low and simmer 15 to 20 minutes or until creamy. Remove the cover, and add the vanilla, cinnamon and grated lemon peel. Cover and simmer another 5 minutes.
