Serves 4 | Prep Time 20 minutes | Cook Time 25 minutes
• 4 slices Eden Dried Tofu, soaked in warm water to cover for 20 minutes, reserve soaking water
• 2 cup water, for cooking tofu and shiitake
• 1/4 cup Eden Sliced Shiitake Mushrooms
• 1 1/2 Tbsp Eden Shoyu Soy Sauce, or to taste
Squeeze dried tofu to remove soaking water and discard soaking water. Rinse slices under cold water and squeeze again. Place all ingredients in a saucepan, cover and bring to a boil. Reduce heat and simmer for 20 minutes. Pour into a strainer and allow to cool. Place the shiitake slices in a small bowl. Slice the dried tofu into thin lengthwise strips. The shiitake and dried tofu are now ready to use in making rice, noodle or vegetable sushi.
VARIATION: Add 3 tablespoons of pure maple syrup to the cooking liquid, at the beginning of cooking, for a sweeter flavor.
