• 1 1/2 cups organic unbleached white flour
• 1/2 cup Eden Soft White Pastry Wheat Flour
• 1/4 tsp Eden Sea Salt
• 2 tsp non-aluminum baking powder
• 1/4 cup organic tofu mayonnaise
• 1/4 cup Eden Extra Virgin Olive Oil, or Safflower Oil
• 3/4 cup Vanilla Edensoy, or Extra Vanilla
• 1/4 cup organic maple syrup
• 1 Tbsp Eden Apple Cider Vinegar, or Brown Rice Vinegar
• 2 tsp pure vanilla extract
Preheat the oven to 375°. Mix all dry ingredients together. Combine all wet ingredients and mix with the dry ingredients, forming a smooth batter. Lightly oil a cake pan and dust with unbleached white flour. Dump out the flour. Pour the batter into the cake pan and bake for 25 to 30 minutes until golden. Remove and allow to cool before adding you favorite frosting or topping.
