• 15 ounces Eden Lentils w/Onion & Bay Leaf, do not drain
• 2 cups organic diced tomatoes, do not drain
• 14 ounces Eden Crushed Tomatoes
or Eden Crushed Tomatoes with Onion, Garlic & Basil
• 2 Tbsp Eden Extra Virgin Olive Oil
• 2 cloves garlic, minced
• 1 cup onions, diced
• 1/2 cup carrots, sliced into rounds
• 1/2 cup green bell pepper, diced
• 1/4 cup celery, diced
• 1 medium organic potato, peeled and cubed
• 3 cups water
• 1/2 tsp dried basil
• 1 Tbsp Eden Shoyu Soy Sauce
• 1 Tbsp Eden Mirin, optional
• 1/4 cup fresh parsley, minced for garnish
• 1/8 to 1/4 tsp Eden Black Pepper
Heat oil in a medium sauce pan, sauté garlic and onions for 2 to 3 minutes. Add lentils, tomatoes, crushed tomatoes, celery, carrot, green pepper, potatoes, basil and water. Cover and bring to a boil. Reduce the flame and simmer for 20 minutes. Season with shoyu, black pepper and mirin. Cook another 5 minutes. Serve and garnish with parsley.
