• 1 Tbsp Eden Extra Virgin Olive Oil
• 1/2 cup onion, finely diced
• 2 cups organic long grain brown rice, washed and drained
• 4 cups water
• 1/4 tsp Eden Sea Salt
• 1/3 cup Eden Dry Roasted Almonds, remove skins
• 1/4 cup Eden Dried Montmorency Cherries, chopped, and
1/4 cup Eden Dried Cranberries
• 1/4 cup Thompson Organic Seedless Raisins
or Eden Dried Wild Blueberries
• 1 1/2 tsp curry powder
• 1/2 tsp Eden Cumin
• 2 pinches Eden Ground Cinnamon
• 2 Tbsp fresh parsley, finely minced
Heat the oil in saucepan and sauté onions for 2 to 3 minutes. Add rice and sauté for another 2 to 3 minutes. Add water, sea salt, blanched almonds, cherries, cranberries, raisins, curry powder, cumin, and cinnamon. Cover and bring to a boil. Reduce the heat to medium-low and simmer for 1 hour. Remove the cover and mix in parsley before serving.
