Chili - Ten Minute

Serves 4 | Prep Time 5 minutes | Cook Time 10 minutes


30 ounces Eden Chili Beans (seasoned dark red kidney), 2 cans, do not drain

3/4 cup water

2 cup organic sweet corn, fresh or frozen

2 cup zucchini, finely diced

1/4 cup fresh parsley, chopped
or fresh cilantro

1 cup organic tomatoes, diced


In a medium saucepan combine the chili beans (with liquid), water, corn, zucchini and tomatoes. Bring to a boil, cover, reduce the flame and simmer about 8 to 10 minutes until the corn is tender. Stir in the parsley and serve.
