• 2 tsp Eden Wakame Flakes
• 1 medium cucumber, sliced thin, peeled if waxed
• 1 cup red apple, sliced thin
Marinade
• 1 1/2 Tbsp Eden Genmai Miso
• 1 Tbsp Eden Mirin
• 2 tsp Eden Brown Rice Vinegar
• 1 Tbsp fresh parsley, minced
• 1/2 cup water
• 2 Tbsp orange juice, freshly squeezed
Soak wakame flakes in cold water to cover for 10 minutes, drain, and place in a bowl with the apples and cucumber. Place all ingredients for the marinade into a blender. Purée until smooth and creamy. Pour over the salad ingredients, mix thoroughly, refrigerate and marinate 1 hour. Pour off marinade and place in a serving bowl.
