• 1/4 tsp saffron threads
• 1/2 cup boiling water
• 1 1/2 cups red onion, quartered
• 28 ounces Eden Crushed Tomatoes
• 1 large cucumber, peeled, seeded, and cut into chunks
• 1 Tbsp Eden Extra Virgin Olive Oil
• 1 1/2 Tbsp Eden Apple Cider Vinegar
• 1/2 tsp Eden Sea Salt, or to taste
• 1/4 cup fresh chives or scallions, finely chopped for garnish
Place the saffron, onion, garlic and boiling water in a food processor. Process for 10 seconds and let sit for 5 minutes. Add the remaining ingredients, except the chives, and puree. Chill for 45 to 50 minutes before serving. Garnish with chives before serving.
