Serves 4 | Prep Time 15 minutes | Cook Time 10 minutes
• 2 Tbsp Eden Hiziki, washed, soaked 15 min. in warm water, drained
• 2 cups mixed baby salad greens
or lettuce
• 1 medium tomato, sliced
• 1/4 cup carrots, coarsely grated
• 1 avocado, seeded, peeled, and sliced or cubed
Italian Dressing
• 1/4 cup Eden Extra Virgin Olive Oil
• 1/2 cup water
• 2 Tbsp Eden Brown Rice Vinegar
• 2 Tbsp Eden Red Wine Vinegar
or Eden Apple Cider Vinegar
• 2 Tbsp organic maple syrup
• 1 1/2 Tbsp Eden Shoyu Soy Sauce
• 1 tsp Eden Dried Basil
• 1/2 tsp Eden Dried Oregano
• 2 cloves garlic, minced
• 1/8 tsp Eden Paprika Powder
• 1/4 tsp Eden Black Pepper
• 2 Tbsp fresh parsley, minced
Place the hiziki in a small saucepan, add cold water to just cover the hiziki. Cover the pan and bring to a boil. Reduce the flame and simmer for 10 minutes. Pour into a strainer and rinse under cold water. Place the hiziki in a salad bowl with the salad greens, tomato, carrot and avocado. Toss to mix.
Prepare the dressing by placing all ingredients in a blender. Pulse several seconds to blend evenly. Place the dressing in a serving container. Pour over salad before serving.
