Millet Squash Porridge

Serves 4 | Prep Time 10 minutes | Cook Time 35 minutes


• 2 cups precooked, leftover Eden Millet

• 1/2 cup buttercup squash, cubed
or butternut squash

• 1/4 cup onion, diced

• 1 pinch Eden Sea Salt

• 1 Tbsp Eden Toasted Sesame Oil

• 4 cups cold water

• 2 Tbsp fresh parsley, minced

• 1 1/2 tsp Eden Tekka, any Eden Gomasio, Dulse Flakes, or Eden Shake


Heat oil in a saucepan and sauté millet until it starts to release a nutty aroma, stirring frequently. Add onions and sauté for 2 to 3 minutes. Add squash, water, and salt. Cover and bring to boil. Reduce heat to medium-low and simmer 30 to 35 minutes until creamy. Place into individual serving bowls and garnish with parsley and a small amount of gomasio or any Eden condiment.
