• 1 1/2 Tbsp Eden Red Wine Vinegar
• 1 Tbsp Eden Extra Virgin Olive Oil
or Eden Black Sesame Oil
• 1 1/2 tsp Eden Barley Malt Syrup
• 2 tsp any Eden Mustard
• 1 1/2 tsp organic maple syrup
• 2 Tbsp water
• 1/4 tsp Eden Black Pepper
• 8 cup baby salad greens
• 1/4 cup red onion, sliced into thin rounds
• 1/2 cup carrots, coarsely grated
• 2 Tbsp Eden Dried Cranberries
• 2 Tbsp Eden Dried Wild Blueberries
• 2 Tbsp pine nuts, lightly dry pan toasted
Whisk together the first seven ingredients. Place the salad greens, red onion, dried fruit and carrots into a mixing bowl and toss. Pour the dressing over and toss again to mix. Sprinkle pine nuts over.
