• 8 Eden Whole Shiitake Mushrooms, soaked 20 min. in 1 c. hot water
or 1/2 pkg. Eden Sliced Shiitake Mushrooms
• 2 cups water, including shiitake soaking water
• 3 Tbsp Eden Kuzu Root Starch, dissolved in 4 T. cold water
• 1/2 cup onion, diced
• 1/2 tsp Eden Extra Virgin Olive Oil
• 1 tsp fresh parsley, minced
• 1 Tbsp Eden Shoyu Soy Sauce, or to taste
Remove the tips of the shiitake, discard stems and slice caps. Reserve soaking water. Heat oil in a skillet and sauté onion and shiitake for 2 to 3 minutes. Add water and shiitake soaking water to skillet, cover and bring to a boil. Reduce the to medium-low and simmer 5 to 7 minutes. Reduce heat to low, add dissolved kuzu, and stir constantly until thick and translucent. Add shoyu and simmer 2 to 3 minutes. Turn off heat and stir in the parsley. Serve hot over cooked cooked grain, vegetables, or any Eden Pasta.
