Serves 7 | Prep Time 10 minutes | Cook Time 25 minutes
• 14 ounces Eden Kamut Spaghetti, 1 package
or any Eden Pasta
• 2 Tbsp Eden Extra Virgin Olive Oil
• 2 cloves garlic, minced
• 1 medium onion, chopped
• 4 cups Eden Maitake Mushrooms, 2 packages, soaked 10 minutes in warm water to cover
• 25 ounces Eden Spaghetti Sauce, or Spaghett Sauce - No Salt
• 2 cups carrots, sliced thin
• 1 cup zucchini, chopped
• 1/2 tsp Eden Dried Basil
• 1 tsp Eden Shoyu Soy Sauce, optional
Cook spaghetti as package directs and drain. While pasta is cooking, sauté garlic and onions for 1 to 2 minutes. Add maitake (soaking water may be reserved for soup stock) and sauté 2 minutes. Add spaghetti sauce, carrots, zucchini and basil. Cover and bring to a boil. Reduce flame to medium low and simmer for 15 minutes. Add shoyu, if desired, reduce flame and simmer 2 to 5 minutes. Serve over cooked pasta.
