Serves 5 | Prep Time 10 minutes | Cook Time 10 minutes
• 8 oz organic udon or soba
• 1/2 cup carrots, finely julienned
• 1/2 cup fresh daikon radish, finely julienned
• 1/2 cup scallions, finely chopped
Vinaigrette
• 1 Tbsp Eden Toasted Sesame Oil
• 1 Tbsp Eden Sesame Oil
• 1 Tbsp Eden Brown Rice Vinegar
• 1/2 tsp fresh ginger root, finely grated
• 1/2 cup shallots, finely minced
Combine the ingredients for the vinaigrette in a small jar and shake well.
Cook the noodles as package directs. Rinse, drain and plunge into ice water. Drain again and place in a bowl. Add the dressing, carrot, daikon and scallions. Toss to mix. Season with additional shoyu, if desired.
