Serves 4 | Prep Time 10 minutes | Cook Time 20 minutes
• 2/3 cup Eden Quinoa, or Red Quinoa, washed and drained
• 1 1/4 cups water
• 2 tsp Eden Shoyu Soy Sauce
• 1/3 cup pine nuts, lightly pan toasted
• 3 1/2 Tbsp scallions, finely chopped
• 2 1/2 Tbsp fresh mint leaves, chopped
• 2/3 cup cauliflower, small florets, blanched 2 minutes
Place the quinoa and water in a sauce pan, cover and bring to a boil. Reduce flame to medium-low and simmer for 20 minutes. Remove, place in a bowl and allow to cool for a few minutes. Sprinkle the shoyu, pine nuts, scallions, cauliflower and mint. Mix and serve.
