Serves 10 | Prep Time 10 minutes | Cook Time 20 minutes
• 2 cups Eden Quinoa, or Red Quinoa, washed and drained
• 3 cups water
• 1 1/2 cups organic tomatoes, diced
• 1 medium cucumber, peeled, seeded and diced
• 1 cup green onions, chopped
• 1 Tbsp dried mint leaves, or 2 T. minced fresh mint leaves
• 2 Tbsp Eden Extra Virgin Olive Oil
• 1 Tbsp Eden Ume Plum Vinegar, or to taste
• 2 cloves garlic, pressed
• 3/4 cup fresh parsley, finely chopped
Cook quinoa according to package directions. Remove and toss to cool. Combine quinoa, parsley, tomatoes, cucumber, garlic, green onions, and mint. Mix well. Combine olive oil, ume plum vinegar and garlic. Mix into the salad.
