Italian Bean and Pasta Soup

Serves 7 | Prep Time 10 minutes | Cook Time 25 minutes


• 1 cup Eden Kamut Ditalini
or Eden Kamut Elbows, or any Eden Shell Pasta

• 1 Tbsp Eden Extra Virgin Olive Oil

• 1 cup onion, diced

• 2 cloves garlic, minced

• 1/2 cup celery, diced

• 1 1/2 cups carrots, diced

• 4 cups water

• 1 medium organic potato, diced

• 14 ounces any Eden Crushed Tomatoes

• 1 cup Eden Kidney Beans, do not drain

• 2/3 cup Eden Pizza Pasta Sauce

• 1 Tbsp organic tomato paste

• 2 Tbsp Eden Shoyu Soy Sauce

• 1 cup Eden Cannellini (White Kidney) Beans, do not drain

• 1 cup green beans, sliced in 1" lengths

• 1/3 cup frozen or fresh green peas


Cook pasta as package directs, rinse, drain and set aside. Heat oil in a soup pot, sauté onions and garlic. Add celery, carrots, potatoes and water. Cover and bring to a boil. Reduce heat and simmer until vegetables are tender. Add pasta, shoyu, tomatoes, beans, pizza pasta sauce, tomato paste, green beans and peas. Reduce heat to medium-low and simmer 10 minutes. Serve.
