• 1 Tbsp Eden Extra Virgin Olive Oil, or Safflower Oil
• 2 cloves garlic, minced
• 1 medium onion, minced
• 1/3 cup celery, diced
• 1/4 cup diced carrots
• 1/4 cup green bell pepper, diced
• 15 ounces Eden Small Red Beans, do not drain
• 14 ounces Eden Crushed Tomatoes
• 2 cups water
• 1/2 tsp Eden Sea Salt, or to taste
• 1/2 tsp Eden Dried Basil
• 1/4 tsp Eden Dried Oregano
• 1/3 cup organic bulgur
• 1/4 cup fresh parsley, minced
Heat oil in a medium saucepan and sauté the garlic and onions for 1 to 2 minutes. Add the celery, carrot and pepper. Sauté another 3 to 4 minutes. Add the beans, tomatoes, water, sea salt, basil and oregano. Cover and bring to a boil. Stir in the bulgur and bring to a boil again. Reduce the flame and simmer for 20 minutes until the bulgur is tender. Add the parsley, stir and serve.
